5 Months Down, 4 To Go!

Today marks the five month mark! Which means, hopefully, by four months from today we will have a darling little girl here!

So we decided to celebrate by buying a crib! Okay, not really, Stacie has had an eye out for us us, and she called us on Saturday and told us she had found a really good one. We definitely agree! It made it even better when I walked into Babies 'R Us a couple of days ago, and saw the exact same crib for sale, for about four times what we paid for it. YAY!

YAY! For this semester being done!




We are finally done with this semester! YAY! I just finished my last final, and Eric just has to go turn in few papers tonight. Even though I start school again on Monday, I'm ready to enjoy a few days off, and start some new classes. Eric is taking the summer off, so that way we'll only be juggling one school schedule this summer. :)

Eric's New Calling

So after meeting with the Stake Presidency a week ago, Eric has now been set apart to be in our wards bishopric! I'm sure it'll take some adjustment, but I am sure it will be worth it in the end.

Mexican Meatloaf

So we decided that we were going to try new things more often, and this week it was Mexican Meatloaf. (It's kind of a cross between meatloaf, and stuffed bell peppers with a Mexican twist) So we thought we'd share!





Mexican Meatloaf (for 4)

-2 Anaheim Peppers cut in half with seeds removed OR 1 bell pepper cut in fourths with seeds removed
-3/4 lb-1 lb of ground beef
-onion
-taco seasoning
-2 cups salsa
-shredded cheese

*cut the peppers in half (or fourths if using bell peppers), with seeds removed place on a oiled baking sheet.
*season raw ground beef with onions, and taco seasoning and if wanted some salsa (we wish we would've mixed some of the salsa right in, with some on top too)
*top each pepper slice with equal portions of ground beef, and form into small loaves
*pour about 1/4 cup of salsa over each meatloaf, and top with cheese
*bake at 350 degrees for about 30 minutes or until meat is cooked through
*ENJOY!!!

We ate it with cheddar jalapeno bread from Macey's (which was spicier than expected), but they suggested refried beans, mexican rice, or something of that sort. Also FYI: the Anaheim peppers are very similar to a green bell pepper, not spicy at all, they are almost more sweet than the bell pepper. Hope you like it!


Also, Eric wanted you all to see how sad the cilantro, we tried, to grow is. I think we just need to start over!

IT'S A GIRL!!!

We are pleased to announce that we are having a little girl! Everything looks good, and on schedule. As of right now, she is measuring a few days big, but not enough to change our due date of August 24. We'll try to put some of the pictures up (or maybe some of the video) a little bit later!

Half Way!!!

So as of today, we are half way through this pregnancy and the wait for our little one to join us! Tomorrow, we have an ultrasound scheduled to find out if it is a boy or a girl, so we will keep you posted!
